Gluten is a generic term for proteins found in certain cereals: rye, oats, wheat, barley, kamut,
spelt.
Rice, quinoa, buckwheat and corn, among others, replace gluten-containing cereals (wheat, oats, etc.). We use their flours and semolinas to make our recipes.
