Today, we’re off to the Congo for a vegetable moambe, a chicken substitute, cauliflower rice, saka-saka replaced in our recipe by spinach and plantain,
the national dish.
Moambe is also a Central or Equatorial African dish, known by this name in the Congo, and known as “sauce graine” in West Africa.
The fruits of the Elaïs palm are the basis of this sauce, from which the creamy “potopoto” is extracted.
“sauce graine” can be prepared in so many ways, depending on the products available on the market (condiments, meat or fish, vegetables).
Saka Saka or pondu (Congo Brazzaville)
These are manioc leaves pounded with a mortar, similar to spinach but more bitter, and used to prepare (Saka Saka) with palm oil or moambe.
The plantain banana is a fruit that can be eaten like a vegetable, containing complex carbohydrates that provide energy for a long time.
But it must be eaten cooked to benefit from this.
It contains a high level of non-digestible starch (like fibre), and its flavour is more similar to sweet potatoes than bananas.
Rich in antioxidants,
bananas help prevent the onset of many diseases.
In addition, the sugars they contain help maintain good gastrointestinal health.
