In India and Nepal, the word dal refers to several lentil-type legumes.
By analogy, this is the name given to an Indian dish based on legumes.

It is also spelled dahl, dhal or daal.

This lentil dahl is a delicious all-round meal.
we added spinach shoots and vegetables of the moment,
but of course, as always, it could be replaced by other vegetables depending on the season.

As well as being exquisite to eat, dhal has many health benefits.
And that’s thanks to its main ingredient: lentils.

Whether yellow, green or coral, lentils are an excellent source of vegetable protein (they contain around 25%) and carbohydrates (around 50%),
which the body needs for energy.

Dhal is also an interesting source of fiber, which aids digestion and which we tend to lack in our diet.
