Sweet potato goulash

In Hungary, goulash is known as gulyás leves, i.e. cattleman’s soup. Originally, it was a peasant stew made with beef, but in our recipe it’s made with seitan, red peppers, mixed vegetables and sweet potatoes, a dish that’s very common in all Eastern European countries.

Its distinctive red color is due to the essential paprika that characterizes this dish.
